Dinner: Stir Fry with Orange Sauce

I mentioned that I had a friend who is a chef and on his way to becoming a nutritionist. He and his girlfriend, who is also a dear friend of mine, came over last night and we all cooked a healthy meal together.
Here we are at wedding that he catered and I photographed.

We had a lot of fun working together on the meal and it just proves that you can eat healthy and still have fun and be social while doing it.

We used a recipe found on www.allrecipes.com a great resource when looking for something specific. I just typed in stir fry and found this recipe. You can even change the serving size to the amount you are cooking for and it will adjust the recipe for you.

Here is the exact recipe we went by:
Stir Fry Broccoli with Orange Sauce

INGREDIENTS
1 teaspoon sesame oil
1 teaspoon canola oil
1 1/2 cups broccoli florets, bite-size
1/2 cup sliced or chopped water chestnuts, drained
1/2 cup orange juice
1 tablespoon cornstarch
1 tablespoon light soy sauce

DIRECTIONS
Add oils to a small skillet on medium-high heat. Add broccoli and water chestnuts; stir-fry 3 minutes. In a small bowl, combine remaining ingredients. Add to broccoli; lower heat and cook until sauce is thickened, 2 minutes.

We modified it by adding chicken, onions, mushrooms, and beans sprouts. We served it with brown rice, edamame, and pot stickers.

I just got around to reading this post and actually I am going back to school to be a dietitian, not a nutritionist. Just to clarify to everyone, you have to have a degree to be a dietitian, anyone can go out and say they are a nutritionist. Some weirdo could make up some "miracle vitamin supplement" or something like that and call themselves a nutritionist, but to be a dietitian, a degree is required...just to clarify ;)
