Lunch: Bruschetta Grilled Cheese



Everybody knows the classic grill cheese, but I like to add my own personal spin. This is an original concoction I came up with myself, although I am sure that there are many variations.

Ingredients
2 slices of whole wheat bread
A small amount of olive oil
A slice of Provolone
2 Tbl. Shredded mozzarella
2 Tbl. Parmesan
4 slices of tomato
2 large basil leaves
1 Tsp. fresh cracked pepper

Lightly brush some wheat bread with olive oil and then add a slice of Provolone, Mozzarella, and Parmesan cheese. On this particular sandwich most of cheese was shredded. Then add a couple slices of tomatoes, some fresh basil, and cracked pepper. I put it in the George Foreman Grill for about 4 minutes, but you could use a skillet or toaster oven as well.

Next time you think about grilled cheese, forget the Kraft and reach for something heartier. Add other great fruits or vegetable combinations, like Monterey jack with avocado, or goat cheese with figs. The possibilities are endless. Of course as always moderation is in order when it comes to cheese. However, let's not forget that cheese is a great source of calcium and protein that our bodies need among other nutritious benefits. Next time you are in a photo where someone ask you to "say cheese" you can smile for whole new reason.
